4 lamb chops (about 4 ounces each)

1½ tablespoons olive oil

2 cloves garlic, finely grated

1 teaspoon chopped fresh rosemary

½ teaspoon chopped fresh thyme

Sea salt and cracked black pepper, to taste
Mint Sauce

¼ cup mint jelly

1 tablespoon fresh lemon juice

1 tablespoon warm water
Instructions

Preheat the oven to 425°F. Place a cast-iron skillet in the oven while it heats.

In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper. Rub the mixture all over the lamb chops.

Carefully remove the hot skillet from the oven and arrange the chops in a single layer.

Roast uncovered for 7–9 minutes, depending on thickness, until the internal temperature reaches about 140°F for medium.

Transfer chops to a plate, tent loosely with foil, and rest for 5–8 minutes.

Stir together mint jelly, lemon juice, and water to create a spoonable sauce. Serve alongside the lamb chops.
