Pan-Seared Garlic Herb Oyster Mushrooms
Tender oyster mushrooms are quickly seared in olive oil and soy sauce, then finished with buttery garlic and fresh herbs for a rich, savory flavor. This simple, elegant side is ready in under 20 minutes and pairs perfectly with grains, pasta, or roasted proteins. The mushrooms stay juicy and flavorful, making this an easy yet impressive addition to any meal.

Directions

Ingredients

  • 1 ½ pounds oyster mushrooms, separated into individual pieces

  • 2 teaspoons olive oil

  • 1 teaspoon tamari or soy sauce

  • 1 tablespoon unsalted butter

  • 1 clove garlic, minced

  • Fresh parsley or chives, chopped (optional)

  • Salt and freshly ground black pepper, to taste

Instructions

  1. Gently wipe mushrooms with a damp cloth to remove any dirt. Trim the bottom stems if they feel tough and slice larger mushrooms in half.

  2. Heat olive oil in a large skillet over medium heat. Toss mushrooms with soy sauce, then add them to the skillet. Let them cook undisturbed for 3–4 minutes until lightly golden on one side.

  3. Flip the mushrooms and continue cooking until tender, about 2–3 more minutes.

  4. Move the mushrooms to the side of the pan and add butter and garlic. Sauté for 30 seconds until fragrant, then stir everything together and cook for another minute.

  5. Season with salt, pepper, and fresh herbs before serving.

Notes:

  • Mushrooms absorb water quickly, so avoid soaking them; a damp cloth works best for cleaning.

  • Any fresh herbs like thyme, rosemary, or chives can be used for garnish.
